DESCRIPTION
Tapioca Syrup is a light brown colored sweetener with a low flavor profile. Derived from the cassava or yucca root, it has been grown, harvested and used for thousands of years for its nutritional and functional benefits primarily in South American, Asian and Indian cuisine. The light color and flavor complements other ingredients and works subtly to boost light to medium colors as well as fruit, herb, hearty nut, vegetable and savory spicy flavor. Tapioca Syrup is a complex carbohydrate that breaks down slowly in the body and sustains energy flow. It is hypo-allergenic and adds shelf stability and consistency. Tapioca Syrup is available in conventional and organic forms with a variety of sweetness intensity levels (DE ranges). Custom blends are available. APPLICATION
Tapioca can be used as a binding agent, also complements, enhances, and fortifies color and flavor while extending shelf life. A multitude of properties, it gives food technologists the ability to reduce or substitute High Fructose Corn Syrups (HFCS), other highly processed sweetening agents and the amount of additives and preservatives in formulation. This results in a “clean” label declaration. Tapioca is a multi-purpose sweetener suitable for traditional, low sugar and vegan food applications in baked goods, beverages, confections, cereals, desserts, non-dairy, prepared foods, snacks, seasonings and sauces.
