PROCEDURE:

Mix the cold water with the Mira-gel until it is dissolved. Add this to the top of a double boiler along with the Envision® and the sugar. Heat over boiling water until the mixture is hot.

Add the lime juice and the peel and cook, stirring constantly, until the mixture is thick.

In a medium mixing bowl, beat the yolk with the milk. Add a small amount of hot mixture to the yolks and blend. Add the yolks to the saucepan and cook about five (5) minutes. Remove from heat and cool slightly. Pour into the partially cooked pie crust.

Cover with meringue and bake 12-15 minutes at 425˚ F. Cool before serving.

  NOTE: When using Super Envision® Flavor and Texture Modifier, use 1/8 the amount of Envision called for in formula and make up the difference with sugar. For a new formula, add Super Envision‚ at between 0.5% and 1.0% as a starting point.
