Fill the bottom pan of the double boiler with water
and bring to a boil.
In the top pan of the double boiler, combine all of
the ingredients EXCEPT the mint oil and the Invertase.
Heat the mixture, while stirring, over the
double boiler.
When it reaches 130°F remove from heat and let
cool to 120°F. Add the
Invertase and the mint oil. Stir until well-blended.
Form into patties and coat with chocolate.
