PROCEDURE: Place the FreshVert® and egg albumen into a bowl. Using a wire whip, beat at high speed until light.

Place the granulated sugar, corn syrup and water into a kettle.
Bring to a boil and cook to 230°F.

Remove from heat and add to FreshVert® mixture.
Mix at a slow speed until blended. Beat at high speed until light.

Use as an ingredient in fudge, creams and coconut.
Store unused portion in an airtight container.
