PROCEDURE: Melt the chocolate liquor and butter in a saucepan.

Place half of the AMERFOND® into a mixing bowl with the water, salt, invertase and flavor. Mix well.

Add the remaining AMERFOND® and mix until uniform.

Add the chocolate liquor and butter. Blend in well. Scrape down the sides of the bowl as needed.

Allow the batch to stand for 15-20 minutes or until firm.

Roll, form or extrude into centers.

Coat with chocolate.
