Melt the fat flakes in a pan. Add the peanut butter and mix until uniform.
Place half of the AMERFOND® into the bowl of an upright mixer.
Add the water, salt and invertase and mix until uniform.
Add the remaining AMERFOND® and mix until uniform.
Add the peanut butter/fat mixture and mix well at slow speed. Scrape down the sides of the bowl as needed.
Allow the batch to stand for 15-20 minutes or until firm.
Roll, form or extrude into centers.
Coat with chocolate. |
