PROCEDURE: Place AMERFOND®, corn syrup, evaporated milk, invertase, and peppermint oil into a bowl of an upright beater or dough mixer. Mix well and allow to stand for 15 minutes.

Gradually add the melted chocolate coating.

Mix until uniform, scraping down bowl or mixer several times.

Allow batch to stand firm (about 20-25 minutes).

Roll, form or extrude into centers.

Coat with chocolate.
