PROCEDURE:

Place the AMERFOND®, corn syrup, water and invertase into a bowl of an upright beater or dough mixer.

Mix at slow speed for 20 minutes.

Add almond paste in small pieces.

Mix until uniform, scraping bowl several times.

Allow batch to stand until firm ( about 15-20 minutes).

Roll, form or extrude into centers.

Coat with chocolate.
