PROCEDURE:

Place the egg albumen, corn syrup, water, invertase, peppermint oil and half of the AMERFOND® into the bowl of an upright beater.

Mix at a slow speed until blended, then beat at a high speed for 3-4 minutes.

Reduce mixing speed and add the remaining AMERFOND® and mix until uniform, while scraping down bowl several times.

Allow the batch until firm (about 15-20 minutes).

Roll, form or extrude into centers.

Coat with chocolate.
