PROCEDURE: In a double boiler or remelt kettle, combine the AMERFOND®, corn syrup and water.

While mixing, heat to 150° - 155° F.

Add the invertase and peppermint oil and mix well.

Deposit onto wax paper or starch or rubber molds.

Remove from paper or molds when set.

Coat with chocolate.
